Yacon syrup is made by extracting the juices from the yacon tuber’s roots, then filtered and evaporated. It is said to be similar to honey, maple syrup, or molasses in viscosity and texture, and its sweetness lends it to the same usages. Use yacon syrup as you would any sweetening syrups – in yogurt, smoothies and any other drinks, as well as in baking.
