This fermentation solution is ideal to produce neutral alcohol base for formulation into beverages such as alcopops and hard seltzers, making this premium yeast nutrient with a non-DAP nitrogen source the perfect tool for distillers and seltzer producersInstructions For Use: Due to the neutrality target of the final product, focus should be on sterility throughout the process. However, please note that sterilization or pasteurization could damage vitamins contained in SpringFerm™ NAB-2.First, cool the sugar solution down to 30-35°C/86-95°F, then add SpringFerm™ NAB-2. If possible, run agitation/recirculation for 10 minutes to ensure homogeneity prior to yeast pitching.Yeast should be either pitched direct into the fermentation vessel (if the yeast chosen is certified E2U™) or rehydrated in a separate vessel. Fill a vessel with 10x the weight of yeast in sterile water at 32-35°C/90-95°F. Add dry yeast to the vessel and let it rest for 10-15 minutes. After this waiting period, gently stir the solution to further rehydrate the dry yeast in water to make a cream solution. Wait an additional 10-15 minutes and the cream yeast is ready to pitch.For the yeast strain chosen, please consult the yeast TDS for fermentation temperature ranges.

This yeast assimilates very little maltotriose but assimilates basic sugars (glucose, fructose, saccharose, maltose) and is characterized by a neutral aroma profile respecting the base beer character.Safbrew F-2 resists to high alcohol levels (>10% v/v) and allows brewers to obtain all the properties of refermentation :Beer preservation thanks to oxygene trappingContribution in roundness and maturation aromasCarbonationSticks well at the bottom of the bottles/casks and forms a nice haze when it is resuspendedRehydrationSafbrew F-2 should not be rehydrated directly in the beer.Sprinkle the yeast in minimum 10 times its weight of sterile water at a temperature of 27°C ± 3°C (80°F ± 6°F).Leave to rest 15 to 30 minutes. Gently stir.USageAdd 5 to 10 grams of sugar per liter of beer (to obtain a saturation of 2.5 to 5.0 g/l of CO2 ).Pitch the sweetend beer, that should be at fermentation temperature (20-25°C) with the rehydrated yeast.Carbonation will be achieved in 1 to 2 weeks at 20-25°C.At the end of refermentation, the beer can be cooled down and will gain in roundness after 2 to 3 weeks.
